Chef Javier Codina’s seasonal menu explores French, Spanish and Californian influences. A crisp green-apple salad with sauternes sauce adorns tender sweetbread cannelloni.
Slow-cooked Darling Downs wagyu beef cheeks with red-wine jus melt away on the knife beside deliciously creamy polenta. Ocean trout with crushed potatoes is complemented by a yabby and tarragon salad and lobster vinaigrette.
Chocolate delice with Valrhona chocolate ice-cream is simple and deliciously bittersweet, perfectly accented with a dollop of minced fruit.
